Natural & Humane Hams

Our naturally raised and made, uncured ham brings you our 'damn fine' flavor with pork raised without antibiotics or added hormones and only vegetarian feeds. Our natural hams come from the DuBreton in nearby Quebec and are certified humane by Humane Farm Animal Care.

 

We brine our natural, uncured ham with Vermont maple syrup, just enough salt and a combination of spices before smoking with the sweet, mellow smoke from corn cobs and maple wood, to create a perfect balance of flavor.  We add no sodium nitrite, only celery juice and sea salt, which are natural sources of nitrate.

 

We first hand-trim the boneless hams  - we do this demanding work to ensure you enjoy only the finest parts of the ham, with just enough fat for flavor. This care extends to the moisture content of our ham.  It is neither dry nor moisture-laden.

The result is our Vermont Smoke and Cure, natural ham.  You get to enjoy only great tasting ham, nothing more, nothing less.

NATURAL, UNCURED HAM STEAK

Our ham steaks are quick and easy, perfect to throw on the grill or in the pan for a dinner for a few, dice up for omelettes or a quiche, or just about anything else! Cut from our traditional cure hams.  A half inch thick slice of our delicious traditional cure ham, in a nine to twelve-oz piece individually wrapped.

NATURAL, UNCURED PETITE HAM

Our Petite Hams are at once a revelation and a throwback to an earlier day.  These pieces of ham haven't been tumbled as long as hams that get netted to make teardrop-shape hams, so they are a bit more firm, like a bone-in ham.  And the smaller size gives them more surface area per pound, so they soak up extra smoke and flavor.  The result for you is a delicious little ham.
