Natural & Humane Hams
Our naturally raised and made, uncured ham brings you our 'damn fine' flavor with pork raised without antibiotics or added hormones and only vegetarian feeds. Our natural bellies come from DuBreton in nearby Quebec and are certified humane by Humane Farm Animal Care.
We brine our natural, uncured bacon with Vermont maple syrup, just enough salt and a combination of spices before smoking with the sweet, mellow smoke from corn cobs and maple wood, to create a perfect balance of flavor. We add no sodium nitrite, only celery juice and sea salt, which are natural sources of nitrate.
We first hand-trim the boneless hams that we have already purchased at the highest trim level. We do this demanding work to ensure you enjoy only the finest parts of the ham, with just enough fat for flavor. This care extends to the moisture content of our ham. It is neither dry nor moisture-laden.
The result is our Vermont Smoke and Cure, natural ham. You get to enjoy only great tasting ham, nothing more, nothing less.
