Our Naturally raised and made Summer Sausage brings you our 'damn fine' flavor with pork and beef raised without antibiotics or added hormones and only vegetarian feeds. We use no added sodium nitrite or any other artificial preservatives or anything else - pure flavor!
Raising them naturally is only the first step, though. To raise pork and beef without the need for routine administration of antibiotics to keep them healthy, they need adequate space, air and light. Our natural meats all meet the humane standards of Whole Foods, the natural foods chain of stores that has greatly helped grow the move to natural and humanely raised meats.
We purchase from as nearby as possible given available supplies and prices. Our natural pork for grinding comes from DuBreton or from Coleman Natural Meats, and our natural beef from our friends at Pineland Farms Natural Meats in Maine.
Made without sodium nitrite, so it is called uncured. Celery juice powder provides a natural source of nitrate.
This is summer sausage the way it is supposed to taste. The real deal. A deep, clean flavor with the mild tang of a true Summer Sausage. Ours has such great flavor because we still ferment the Summer Sausage for a full 12 hours before cooking, and we don't use MSG as a crutch to give it flavor.
Pairs well with both mild soft cheeses, with the tangy acidity complementing the fat, and with sharper cheeses, with the mild flavor offsetting a cheese with a bite.
