Made from pork raised without any antibiotics or added hormones, fed a vegetarian diet and seasonally free ranging on pasture or in deep bedded pack barns.
We brine the bellies from our Vermont grown pigs with the same brine as our Uncured bacon - with a balance of Vermont maple syrup and moderate amount of salt. They are cured without sodium nitrite, but with celery juice powder, a natural source of nitrates that yields the same flavor as our traditionally cured bacons and hams. No nitrites or nitrates added except for those naturally occurring in celery juice and sea salt. Thick sliced.
Cured with water, sea salt, Vermont maple syrup, dehydrated celery juice, natural flavorings, lactic acid starter culture (not from milk). Contains no gluten, no nuts, no milk.
