We make our uncured ham with the same balance of Vermont maple syrup and moderate amount of salt as our traditionally cured hams.
They are cured with celery juice powder, a natural source of nitrates that yields the same flavor as our traditionally cured hams. Made from pork raised without any antibiotics, fed a vegetarian diet and certified humane by Humane Farm Animal Care.
Ingredients: pork, water, potassium lactate (from corn), sea salt, Vermont maple syrup, turbinado sugar, dehydrated celery juice, spice extractives, lactic acid starter culture (not from milk).
Contains no wheat gluten, no nuts, no milk.
1.7-2.3 lbs each. Average weight 2 lbs (note: photo is of our 9 lb ham, cut in half and with steaks cut from it)

HANDLING Ships refrigerated. Refrigerte upon receipt. Best by date of 56 days, and we smoke and ship them every week.
Fully cooked, ready to eat or warm if you'd like. To warm our hams: They're already fully cooked, so you just need to warm them through, but without drying them out. We suggest the following:
1. Pre-heat oven to 300° F.
2. Remove the ham from packaging.
3. Wrap the ham in tin foil to retain moisture.
4. Place the wrapped ham in a roasting pan
5. Place the pan in the center of the oven.
6. Plan to warm the ham for approximately 10 minutes per pound or until warmed through.
7. Check ham after 6 minutes per lb and then again after 8 minutes per lb to ensure that it does not become dry. Carve and enjoy!
