Vermont Grown Pork We now offer natural bacon, ham and sausages made from pork naturally grown here in Vermont and we're excited about it! The pigs live on pasture during much of the year and in barns with deep bedded packs during the winter and early spring. They eat only grains and legumes, minerals and pasture or hay. Farrowing crates aren't used. These are happy, healthy pigs. Excellent Smoked Meats and Sausages for All Craftsmanship and great flavor have earned us a fine reputation here in Vermont. As a result, many farmers bring us hams and bacons from their own hogs to be smoked. It is our mission and privilege to keep local, artisan meat processing available to all. We also work to create markets for Vermont-grown meats by buying meats raised by Vermont farmers to make ‘damn fine’ meats that our customers love. Our hot dogs and other products sold under the name or our sister company, The Farmers Diner, are made with beef and pork grown in Vermont and New Hampshire. We buy all of the pure Vermont Maple Syrup for our ham, bacon and sausages from Sweet Retreat, just 10 miles away. We will be offering more and more natural and Vermont-grown products as we're able. Processing Services for Farmers We make delicious smoked meats and fresh sausages from the hogs, turkeys and beef over 600 Vermont farmers bring us each year. From part-timers with one hog in the backyard to full-time farmers selling in farmers markets, to CSA (Community Supported Agriculture) customers and in stores, their meats all get the same ‘damn fine’ smoking. We will use them for our upcoming "Vermont Grown" line of products that will be found in select Cooperatives, health food and independent stores in Vermont and nearby New Hampshire. Please give us a call if you're interested. During 2008, we purchased about 30,000 lbs of Vermont grown pork, turkey and beef for our products. We work to significantly increase that number every year. Custom Smoking Services For farmers wishing to bring us meats for smoking on a custom (for home consumption and not for sale; made outside of USDA inspected hours, but using the same food safety protocols) basis, here are the basics: • PLEASE NOTE: please call ahead to book an appointment during the busy fall season. An appointment will be required until further notice. • Bring in your meat fresh or frozen, wrapped in butcher paper or in clear plastic (not black plastic, that isn’t healthy and the USDA forbids it), in a sturdy box. (If you don’t, we’ll have to charge you to do it after it arrives). • We’re located in the back half of the D&D Smokehouse and Deli (aka the Shell Station (don’t laugh, remember that other Vermont food company that started out in a gas station (the ice cream guys)). Our door faces the gas pumps and says “Receiving” over the top of it. From I-89, Exit 6, 4.5 miles down the hill to the intersection of VT Routes 14 and 63. Shell station is on your right. • We’re open from 8 to 5, Monday through Friday. Just stop in and ring the doorbell. • We’ll call you the following Monday or Tuesday morning to let you know it is time to pick up your ham, bacon or other treats. • Brining & Smoking fee is $1.00 per lb on the fresh weight. We offer bacon slicing and vacuum packing only for USDA-inspected processing. • We use the same brine and smoke as our bacon and ham that you can buy in the stores! • Please email or call with other questions. We're sorry but we can't offer tours due to our tiny size, and we let the store in front handle all on-site retail sales. You can raise a pig and have us smoke the bacons & hams for you! |
